Danish Loaf

Last nite was so jam.. thought I won't be able to reach home in time to bake my Danish Loaf as I promise Dana to bake 1 for her & her sweet heart. Lucky reach home only 7.45pm. So get ready all the ingredients then start baking around 8pm by the time I finish is already 1am. Why took me so long to bake 2 loaf of bread? Because weather no good for bread making, rainy days very cold.. only very good for sleeping (chuckle). So the yeast become very lazy to move, cold2 weather they also want to sleep.. hehehe.

Anyway found a way to make them move, I put the oven to 50-70C and put the dough in into the oven for 1hr or more till it double up a bit slow but it works.. & works quite well. My Danish Loaf turns out well :) Thank God :)

There you go Dana deary... this if for you & yr sweet heart. Hope you like it. Remember to heat it up b4 eat to make it soft & fluffy again.



Here's the Recipe:

Ingredients:

15gm Butter
60gm Pastry margarine

(A): [Combine well]
100gm High protein flour or bread flour
30gm Medium protein flour or plain flour
5gm Milk Powder
1/8 tsp Bread Improver

(B): [Mix]
2.5gm Dry Yeast or Instant Yeast (if using fresh yeast = 5-7gm)
55gm Cold water
22.5gm Castor Sugar
1/8 tsp Salt
15gm Egg



Method:
  1. Mix B into A and knead into a dough. Add in butter and knead dough until smooth.
  2. Cover with plastic sheet and rest for 30mins.
  3. Wrap pastry margarine with plastic sheet and roll out into a square.
  4. Roll the dough into double the size of the pastry margarine.
  5. Place the pastry margarine on the dough and fold it up.
  6. Roll out the dough to 1cm thick, and fold into 3. (means 1/3, 1/3, 1/3). Warp with plastic sheet and freeze for 10-15mins.
  7. Take out and repeat twice.
  8. After 20-30mins, take out and roll out into 14"x16".
  9. Cut into 3 long pieces and braid/pleat it till the end.
  10. Fold in both the end and put into a 4"x6"x4" tin (lightly greased) and leave it to prove till double the size.
  11. Brush with egg wash and bake at 160C for 25-30mins.
