Pandan Kaya Swiss Roll (attempt 1)

This is my first attempt to make swiss roll. Been wanting to try for very long dy. So finally I make I found the recipe for the Pandan Kaya Swiss Roll I've been wanting to make. But my problem is I don't have low protein flour & sponge mix flour. So I just give it a try & substitute the flour with normal flour (medium protein) and self-raising flour (check on the net is says sponge mix/optima flour is ready mix flour with raising agent & sugar) so I thought it should be ok la.

But it turn out my Swiss Roll have turn into Swiss Box instead. After cook & rise, the cake is too thick to roll and quite hard. Wonder if I should skip the dessicated coconut. Will try that next round. Was so dissapointed sigh... luckily the taste is still ok.. just the out look not nice only...nevermind la.. will try again next time.
