Chocolate Chip Cookies

Bake some chocolate chips cookies today. This is always one of my brother fatty's favourite cookies during the Chinese New Year. I only make 1/2 a portion of the recipe only but the recipe below is for 1 full portion. Some how my oven temperature was different from the one at my mommy's place and I burned the first 2 tray aiks.... anyway the rest still turns out well... whew~

Here's the recipe:

Ingredients:
320gm Margarine
260gm Brown sugar
2 Eggs
1.5 tbsp Vanilla essence
500gm Self-raising Flour
5-6tbsp Cocoa powder
3/4tsp Baking Soda
1/2 tsp Salt
1.5 tsp Molasses / Honey
250gm Chocolate chips
150gm Almond nips (lightly roasted)

Methods:


  1. Cream butter and sugar at medium speed till creamy.
  2. Gradually add in eggs, molasses and vanilla essence.
  3. Add in salt, baking soda, cocoa powder and flour and mix at low speed. (**Alternative: sieve the flour salt baking soda and cocoa powder together and fold in to form a dough**).
  4. Fold in chocolate chips and almond nips.
  5. Form into balls or use a teaspoon to drop onto greased tray and flatten it a little bit.
  6. Bake at 170-200C for 18-25 minutes or till cook.
  7. Cool and store in air tight container.
Notes: I have made some changes in this cookies.
  • I use mixture of black & white chocolate chips instead.
  • I added in 1/2 tsp of instant coffee (for 500gm flour - add in approx 1tsp).
  • Chill the dough for a while if the dough is too soft or the margarine is starting to melts.
  • Can replace almond nips with any other type of nuts.
