Chop-Chips Walnut Cookies

Made this for hubby's trip. Tomorrow morning he'll be leaving to JB on business trip & I will be home alone till Friday. Not like there's no food there but just something for him to munch on during the long journey to keep him awake. Since I can't be there to accompany him at least my cookies can :)

Here's the Recipe:

Ingredient A:
250gm butter
160gm castor sugar (sweetness already reduced so do not further reduce)
1 tsp vanilla essence
2 eggs size C
1 tsp Instant coffee

Ingredient B (all sifted together):
400gm plain flour
4 tbsp cocoa powder
2 tsp baking powder

Ingredient C:
200gm chocolate chips
120gm walnut, coarsely chop (can use any other type of toasted nuts)

Methods:
  1. Cream A till well combined. Add in B gradually and mix well in to dough.
  2. Lastly add in C and mix well. Keep dough the fridge for a while if it is too soft.
  3. Use teaspoon to shape into balls and arrange on lightly greased baking pan.
  4. Bake in preheated oven at 180C for 15-25 minutes till firm.
  5. Remove and leave to cool before storing.
