Almond Gingerbread Cookies

Promise the little girls that will make gingerbreadman cookies with them so pack all my stuff and go back SB (Sg Buloh) and made these. However, because I never like gingerbread cookies as I don't like the taste of the spices so I use almond cookies recipe instead. Spend 1 whole day making these.

By right should use the royal icing for all the decoration but since I am not good with that, so I decided to use chocolate instead and decoratives. But I must say the decoration part really takes up lots of my time and tiring.. hehehe but satisfying I have to say.. :)



Here's the recipe:

Ingredients:
125gm butter
60gm icing sugar
1 egg yolk
1/2 tsp vanilla essence
60gm almond powder
20gm cornflour
190gm plain flour

Decorations: Cookies decoratives, cooking chocolate melted, or royal icing.

Methods:
  1. Beat butter and icing sugar till fluffy. Add in egg and vanilla and mix well.
  2. Mix almond powder, cornflour, and plain flour evenly.
  3. Add the flour mixture into the butter to form a dough.
  4. Place dough between plastic sheet and roll flat.
  5. Use cookie cutter to cut out desire shapes and patterns.
  6. Bake in preheated oven at 180C and bake for 15-20min.
  7. Cool well before decorating.
