Muruku

This was my first attempt to make muruku and am glad it turn out quite well even though a bit hard but taste wise its still quite nice... only thing is need to find out how to make it light & fluffy :) Anyway must give the credits to hubby as he is my teacher in making the muruku... telling how the dough texture should be and teach me how to use the mould & fry the muruku... else I doubt I can achive it on the first attempt.... Love u darling :)

The dough consist of flour, spices, and coconut milk + grated coconut...

Here's the recipe:

Ingredients:
280gm Babas Muruku flour
1 tsp Omm seeds lightly toasted (can add more if like)
1/4 tsp Tumeric powder
5 tbsp Sesame seeds lightly toasted
30-40gm Grated fresh coconut
200ml Thick coconut milk
30ml Thin coconut milk or water (use more water if needed)
Oil for deep frying

Method:
  1. Add the omm seeds, tumeric powder, sesame seeds and grated coconut into the flour & mix well.
  2. Add in thick coconut milk and mix well.
  3. Gradually add in the thin coconut milk/water to form a soft dough. Add in more water if needed.
  4. Cover with wet cloth and let the dough rest for 30min.
  5. Put dough into mold and press out in spiral form either on baking sheet or saucer. Dough should be easily flow out from the mold. If not then try add more water to soften the dough.
  6. Heat up oil and slide the muruku into the oil and fry till golden brown. Drain and store in air tight container.
